Pork chop suey

A twist on a Pacific favourite - this version is loaded with vegetables.
Ingredients
  • - 2 packets rice noodles or vermicelli
  • - 1 tablespoon oil
  • - 2 teaspoons crushed garlic
  • - 2 teaspoons crushed ginger
  • - 500 grams lean pork, diced
  • - 1 green capsicum, sliced
  • - 1 zucchini, sliced into matchsticks
  • - 1 carrot, sliced into matchsticks
  • - 1/2 cup frozen beans
  • - 1/4 cup soy sauce
  • - 1 cup hot water
  • - 1 spring onion, sliced (optional)
Method
  1. 1. Cook or soak noodles according to packet directions. Drain once they are ready.
  2. 2. Heat the oil in a large pot over a medium heat. Add the garlic and ginger and cook for 2-3 minutes.
  3. 3. Add the pork and cook, stirring often until the meat is cooked.
  4. 4. Add the vegetables and let them cook for 2 minutes or until they are starting to soften.
  5. 5. Add the soy sauce, water and noodles and let the pot simmer for 5 minutes, or until everything is cooked and most of the liquid has evaporated.
  6. 6. Sprinkle with spring onion to serve.
