Mini banana and coconut pancakes

A quick and tasty snack. This recipe makes six mini pancakes.
Ingredients
  • 1 ripe banana, mashed
  • 2 eggs
  • 1/2 cup desiccated coconut
  • cooking oil or margarine
Method
  1. 1. Beat together mashed banana, eggs and coconut.
  2. 2. Heat a non-stick frying pan to a medium heat and spray with a little cooking oil.
  3. 3. Spoon one tablespoon of pancake mixture into the pan.
  4. 4. Cook pancakes on each side until golden brown.
Notes
Cook pancakes one at a time.
