Pastry-less pies
Tasty and hearty, these pies are packed with goodness. They can be made ahead and heated later or you could make one big pie to share.
Ingredients
500 grams lean mince
1 large onion, chopped finely
1 can (400grams) baked beans
1 can (400grams) chopped tomatoes
2 cups frozen mixed vegetables (peas, beans, carrots, corn)
800 grams potatoes, peeled and cut into even sizes
1/4 cup reduced-fat milk
1/2 cup edam cheese, grated
4 tablespoons chopped parsley (optional)
Method
1. Preheat the oven to 190 degrees celcius
2. Brown the mince in a hot frying pan, set aside
3. Add a little oil to the frying pan, cook onion until soft, add the browned mince
4. Add baked beans and tomatoes, stir to combine
5. Stir in frozen vegetables, heat gently until veges are thawed
6. Cook potatoes in boiling water until tender, drain well and mash with milk, cheese and chopped parsley
7. Spoon meat and vegetable mixture into individual dishes or a large pie dish, top with mashed potatoes
8. Bake for 25 minutes until hot and golden.
