Country Chicken

This hearty one-pan chicken meal with lots of flavour will become a family favourite.
Ingredients
  • Oil spray
  • 6-8 chicken drumsticks, skin removed
  • 3/4 cup white long-grain rice
  • 1 1/2 cups water
  • 2 tablespoons wholegrain mustard
  • 1 teaspoon dried mixed herbs
  • 400grams kumara, scrubbed and quartered
  • 1 carrot, chunky cut
  • 1 cup whole green beans or 8 whole brussel sprouts or 2 zucchini cut into chunks
  • 1 capsicum, deseeded and cut into generous wedges (optional)
  • 425gram can apricot halves in juice (drained and discard juice)
Method
  1. 1. Pre-heat a large non-stick frypan.
  2. 2. Lightly spray with oil, add the chicken and cook until golden brown, turning often.
  3. 3. Remove the chicken drumsticks from the pan and set aside.
  4. 4. Add the rice, water, mustard and herbs. Mix well.
  5. 5. Add kumara and carrots to the rice mixture, mix briefly and place the chicken on top of the rice and vegetables. Do not stir.
  6. 6. Cover and cook gently for 15 minutes.
  7. 7. Add the rest of the ingredients, cover and cook until carrots and kumara are tender and chicken is cooked.
  8. 8. May also be baked, covered at 180 degrees celcius for 1 1/2 hours.
Notes
