Beef and bean stew

A simple stew with beef, pumpkin, peas and beans that is designed to feed a crowd.
Ingredients
  • - 800g stewing beef, diced
  • - 2 onions, peeled and chopped
  • - 5 cups pumpkin, diced
  • - 2 cups water
  • - 1 teaspoon beef stock powder
  • - 3 cups peas (fresh or frozen)
  • - 5 cups green beans, sliced (fresh or frozen)
  • - 3-4 tablespoons parsley, chopped
Method
  1. 1. Preheat oven to 180°C.
  2. 2. Heat a frying pan. Brown beef in batches and transfer to a large ovenproof dish with a lid.
  3. 3. Add onions, pumpkin, water and stock powder to the dish.
  4. 4. Put the lid on and place in the preheated oven. Cook for 2 1/2 hours or until the beef is tender.
  5. 5. Add peas and beans. Cook for a further 10 minutes.
  6. 6. Remove from the oven and serve with parsley.
