Basic tomato sauce

This easy and tasty tomato sauce is great to mix through pasta for a quick meal.
Ingredients
  • 1 teaspoon olive oil
  • 2 tablespoons tomato paste
  • 1 onion, peeled and finely chopped
  • 2 teaspoons crushed garlic
  • 2 cans tomatoes (400 gram cans)
  • 1 teaspoon dried oregano
  • 1 tablespoon cornflour (mixed with 2 tablespoons of water)
  • black pepper
Method
  1. 1. Heat a non-stick pan over a medium heat. Add oil and tomato paste.
  2. 2. Cook until tomato paste darkens in colour, stirring regularly.
  3. 3. Stir in the onion and garlic and cook for 5 minutes.
  4. 4. Add the tomatoes and oregano and bring to the boil.
  5. 5. Reduce to a low heat and simmer for 10 minutes.
  6. 6. Stir to break up the tomatoes.
  7. 7. Remove from heat and stir in cornflour mixture, oregano and black pepper.
  8. 8. Serve in place of store bought tomato pasta sauces.
