Reducing fruit waste

Here are some ideas for ways to use over-ripe fruit and skins you may otherwise have put in the bin:

  • Freeze ripe bananas and use in smoothies or home baking.
  • Grate the rind off lemons & limes and use in salads, smoothies or pesto, or freeze for later use.
  • Wash and hull leftover summer berries, place them onto a baking sheet and into the freezer. The next day remove from the baking sheet, place them into a zip-lock bag, and leave in the freezer for future use.
  • Grate apples with their skins on to retain the nutrients. Use these in salads, porridge or muffins.
  • Blend together any fruit that is going soft and put in ice cube trays. Freeze then transfer to zip-lock bags. These can be used in baking or smoothies.
