Easy ways to eat more vegetables

  • Try adding one or two cups of frozen vegetables to casseroles, stir-fries and mince recipes.

  • Add grated vegetables to patties, soups or pasta sauces. This will make meals more tasty and filling.

  • Some of your family might like raw vegetables more than cooked ones. Vegetables that can be eaten raw include carrots, celery, capsicum, broccoli, cauliflower and tomatoes. Cut into small pieces or sticks for easy snacks.

  • It’s not just potatoes that can be boiled and mashed. Try carrot, pumpkin, kumara, yams or parsnips. Get creative and use combinations of vegetables for an extra tasty mash.
